For Everpan owners
Welcome to your Everpan
There's no coating to wear off, so this pan can last a lifetime. It does cook a little differently from non-stick. Five minutes here makes your first week easier.
Getting started
Your first week
Everpan cooks a little differently from non-stick. These five steps make the switch easy.
The manual
PDF, the same as in the box
-
Wash it first
Warm water and a drop of soap. Dry it well.
-
Turn the heat down
Everpan works best on low to medium heat. Most food cooks well a step or two below what you're used to.
-
Use a little oil or butter
Without a coating, a thin layer of fat does the work.
-
Expect a little sticking at first
That's normal. It gets easier as you get to know the pan.
-
Clean without worry
There's no coating to damage. Let the pan cool, wash it with warm water and a soft sponge, and dry it straight away.
Food sticking?
Common questions
The things new Everpan owners ask us most.
My food sticks
Usually the pan is too hot. Cook over medium heat, use enough fat to cover the whole base, and turn the food only once it releases. Butter, olive oil and margarine work best; sunflower oil releases noticeably worse.
Still stuck after a few minutes? Turn the heat down a little and wait another minute, or ease it loose with a spatula.
Marks or colour on the pan
Spots, a darker surface or a bluish sheen are patina from normal use. The pan cooks exactly the same.
Run a finger across it: smooth is fine. If your nail catches, it's burnt-on fat. Boil a layer of water with two tablespoons of baking soda, or put the pan in the dishwasher. White spots are limescale: wipe them with white vinegar.
Oven, dishwasher and induction
Everpan was designed for induction. Use a zone that matches the size of the pan and never the boost setting.
The pan is oven-safe up to 320 °C (600 °F); the glass lid is not. It's dishwasher-safe too, but washing by hand keeps it looking good for longer.
Can I use metal utensils?
Yes. Metal spatulas, spoons, tongs and whisks are fine. Don't cut in the pan or use forks or other sharp tools: they scratch, and scratches aren't covered by the warranty. A scratched pan is still safe to use.
