A non-stick pan is lovely when it is new. Eggs slide around, cleaning takes seconds. Then, after a few years, food starts to stick and the pan goes in the bin. Everpan is our answer to that. But it works a little differently, so here is an honest comparison.
The difference
What is on the surface?
A non-stick pan has a coating, usually PTFE (Teflon) or a ceramic layer. That coating is what makes food slide. It is also the weak spot: heat, metal utensils and scrubbing slowly wear it away.
Everpan has no coating. The surface is plasma titanium, fused into a 3-ply stainless steel body. Titanium is about four times harder than stainless steel. A fine micro-texture holds a thin film of oil, so food releases without a slippery coating.
Side by side
How they compare
| Non-stick pan | Everpan | |
|---|---|---|
| Surface | PTFE (Teflon) or ceramic coating on aluminium | Plasma titanium fused into a 3-ply stainless body |
| Release when new | Very slippery, even with almost no oil | Good with a preheat and a little oil. Not quite as slippery as Teflon, like well seasoned carbon steel pan. |
| After years of use | Coating wears and food starts to stick | Wear tested: 20 years simulated, no change |
| Metal utensils | Avoid | Fine |
| Dishwasher | Often not advised | Fine |
| High heat and searing | Low to medium heat | Fine, and oven and BBQ to 320°C |
| PFAS | PTFE is a PFAS | PFAS free, no PTFE, PFOA or Gen-X |
| Lasts for | 2-3 Years | A lifetime |
Honest trade-off
Where non-stick still wins
A brand-new non-stick pan is more slippery than Everpan. You can fry an egg with almost no oil and no preheat. With Everpan you need to preheat the pan and add a little oil. Skip that and food can stick.
The other side: Everpan works the same on day 3,000 as on day one. A non-stick pan only gets worse.
Our test: we ran the industry-standard wear test four times, which simulates 20 years of use in 3 hours. The Everpan surface showed no change.

How to cook on Everpan
1
Preheat
2
Add a little oil
3
Add your food and wait
4
Clean up
Quick check: flick a few drops of water into the dry, hot pan. If they roll around as little balls, the pan is hot enough.
Who it suits
Should you switch?
Everpan suits you if
You are tired of replacing pans, you like to sear and brown, you use metal tools or the dishwasher, or you would rather avoid PFAS.
Keep a non-stick pan if
You want to cook eggs with no oil and no preheat, and you are happy to replace the pan every few years.
