Cooks on all heat sources
Our pans work on any surface, induction, gas or ceramic. But you can get more creative than that. Because the only ingredient for our pans is steel, you can even use our pans on campfires, bbq's or in the oven.
What is the perfect thickness for a carbon steel pan? A thicker pan heats more evenly and resists warping. But a thinner pan is lighter and heats up faster. So what is the optimum? We believe it is 2.5mm, (0.1'').
Our 2.5mm carbon steel pan distributes heat well, heats up quickly and doesn't break your back. Our pans are 40% lighter than a similar sized cast iron pans.
Carbon steel deserved a better handle. Normal carbon steel pans have a cheap carbon steel handle that gets hot quickly and rusts. We used a Finite Element Method analyses to design a stainless steel handle that is comfortable to hold and doesn't get hot on the stove.
Carbon steel pans are practically indestructible. There is no plastic or coating which can wear off. Even if you damage the seasoning layer you can always remove the entire seasoning layer and season it again.
We pre-season our pans with sunflower seed oil so they're ready to cook, straight out of the box.
